Just when you've thought you've had enough stress in your life between working long hours, fighting traffic, caring for your family, and keeping up with bills, the holidays arrive adding yet another layer of pressure to our already busy lives.

Don't get me wrong, I love the holidays, I only wish I had another 4-5 hours each day to keep up with the extra demands that come along with the season.

To keep some semblance of sanity so as not to detract from the celebrations, I set some realistic expectations and attempt to communicate them with my family and prepare less elaborate, time-consuming dinners, beginning the day after Thanksgiving.

That's where the wonders of Gluten-Free Casseroles, come in.  Not only can you make these ahead of time, but they're also simple to make, easy on the wallet and an excellent way to cut down on food waste.

What's Not to Love About Gluten-Free Casseroles?

Think about it….

  • What other family-sized, cooked-in-one-dish, culinary masterpiece is made up of a combination of those little plastic containers filled with the week's leftovers?  (And according to my family, those leftovers always seem to taste better when they're all combined and have the magic ingredient on them… Cheese.)
  • What other main course do you know of that can turn a “back-of-the-pantry” condiment into an essential ingredient?
  • Side dishes???  Who needs them. Casseroles have it all – protein, starch, and veggies.
  • Casseroles will enable you to get a jump start on get-togethers as many of them can be made ahead of time, frozen and then reheated when you need them.

Makes total sense, right?

Do yourself a favor and check out these five Gluten-Free Casseroles made with just seven ingredients or less.  They're budget-friendly, easy-to-make, super-tasty and will help take a chunk out of your holiday stress.
